
What is Freeze Drying?

Freeze drying is a process used to preserve food (& about 97% of it’s nutrients!) by removing its water content.
First, the food is frozen solid. Then, the frozen food is placed in a vacuum chamber where the pressure is lowered, causing the ice inside the food to turn directly into vapour (a process called sublimation) without melting.
This leaves the food dry, but it still keeps its shape, flavour, and nutrients. To eat it again, you just need to add water (unless it’s candy! Please don’t put water on your candy!)
It’s a way of keeping food fresh for a long time without needing refrigeration.
